Although I have always enjoyed Thai Cuisine while I was in USA, it's has only been recently that I started to passionate abort them in my own kitchen here after  finding racks of fresh lemon grass and Thai Curry paste stacked up in the supermarkets.Armed with my old Thai cooking books and with the help of the net -I have started to prepare couple of Thai Infused recipes to be shared with u folks. " Oh Mom Thai food-YES YES I love it..yummmy yummy.. sudden peck on cheek and a hug is there whenever Thai food finds it's place in my dinner table". 

What's so special abut these Thai curry Paste. These curry paste are hot favorites in many Thai restaurant and based on a delicious paste of fresh and dried herbs and spices, curry is unique and unlike any dish in Western cuisine. The endless combinations and fresh taste make curry a popular dish.Red Curry Paste is the most popular and basic Thai Curry. Its fresh red chilies, mixed with garlic, galanga, lemon grass and Kaffir lime make if extremely versatile for all meat, seafood,vegetables and soup dishes. It's also excellent in marinades and dips. For the following Stir fry I have used the store brought curry paste and the great thing about using curry paste is that you can make your dish as spicy or mild as you like. If you prefer it hotter, simply add more curry paste, or if's too spicy cool it down with an extra splash of coconut milk. Be sure to season with a spoonful of palm sugar and a dash of fish sauce for that truly authentic Thai touch and enjoy!If you cannot get fish sauce -just use soy sauce instead. Serving Size: 4 persons
For The Corn Fried Rice:

1 cup cooked rices
2 onions - sliced into long strips
1/2 cup - American sweet corn - 
3 green chillies - slit length wise
a pinch of turmeric
1 tsp ginger-garlic paste
1 tsp vinegar
1 tbsp soy sauce
salt as per taste

Preparation Methods:
Heat oil in a wok, add ginger-garlic paste & green chilles. Add sliced onions & a pinch of turmeric. Saute until onions turn transparent.Throw in sweet corn & saute for a couple of minutes.Add rice, vinegar & soy sauce. Now add salt as per taste-Mix well.

Ingredients For The Stir Fry:
1/4 cup button mushrooms halved
1/4 cup sliced carrots
1/4 cup baby corn halved
1 green pepper cubed
1 red onion chopped
1tbsp minced garlic
3tbsp thick coconut milk
salt to taste
3tbsp Thai Red Curry Paste
1tbsp chopped lemon grass
1tbsp chopped lime leaves.

Preparation Methods:
Heat a large skillet over medium-high heat. Add couple spoons of oil and saute the lemon grass and lime leaves till fragrant  Add the minced garlic and onions-saute til the onions browned. Meanwhile in small bowl add the curry paste and dilute with the coconut milk-keep aside. Add all the vegetable with slat and cooked till they become tender. Finally pour the curry mixture and blend well. All the mixture to thicken and remove from flame. Serve with the Sweet Corm Friend Rice as a side dish..
