A few days ago I was scrolling through my photo archive in my hard drive and came across these photos of Chap Chye-a favorite taste bud of my hometown. A popular vegetarian mixed vegetable stew which is normally eaten with plain rice or porridge among the locals and I can't believe that I haven't even posted about it yet. This is some seriously good comfort food and I happen to prepare this finger licking plate of Chap Chye while I was in Singapore couple of months ago.Frankly I'm talking u guys -I'm completely hooked!!! Being Asian I just love these stir-fry very much. Onion Pakoda is usually eaten in rainy season. Pakora is a deep fried snack(fritters). It is made of besan (gram flour) and rice flour along with green chilies, curry leaves and spices.all time favorite for children and who need a light evening snack with tea/coffee. All time favorite for children and who need a light evening snack just after school.

Ingredients:
3 arge red onions , finely chopped
1 cup chickpea flour
1 cup rice flour (can substitute with chick-pea flour)\
pinch baking soda
4 green chilies , chopped
handful of curry leaves
chopped coriander leaves
1 teaspoon red chili powder
salt , to taste
vegetable oil , for deep fryiy

Preparation Methods:
Sift the flours together.Rub a little salt into the chopped onions.the onions, add the two flours, chili powder, grated ginger, green chillies, baking soda, curry leaves, coriander leaves and salt. I'm not kidding folks...seriously I don't drink:D Most people doesn't believe me and I don't know why. For the first time I taste red wine and immediately got sick and vomit. I happened to go for a cruise with my sis and friend Vasu to now-where.meaning the cruise liner will stop in the middle of the deep sea for 3 days.That was my first and last...never again I'm going to embrace myself in crowd but I love mock tails.I prepare this Summer Splash for my kids few weeks ago.Essentially a mock tail is any cocktail without the alcohol.

Ingredients:
4 oz pomegranate juice
4 dash grenadine syrup
16 oz orange juice
16 oz pineapple juice
few pomegranate
lime slices
few mint leaves
Cube soda

Preparation Methods:

Fill a collins glass with ice. Add the cube soda. Fill with equal parts of orange and pineapple juice. Add a dash of grenadine, and garnish with lime slices,mint leaves and pomegranate seeds.

As I have mention in my earlier post I have prepare the vegetarian version of Singapore Hokkien noodles upon the request of my hubby. These noodles have become a super hit on my dinner table and even my fussy eater is clearing her plate willing and asking for second helping. This time have used spaghetti instead of normal egg noodles.. Enjoy these lip smacking Veg Hokkien noodles from my kitchen to your.

1/2 packet of spaghetti
1/2 cup carrot
1/2 cauliflower
1/2 broccoli
1/2 cabbage
1/2 cup slice baby corn

For the Sauce:
1/2 cup stock

I willing confessed that I'm glued to noodles..just like magnets.I don't know whether anyone out there would say no to a bowl of noodles with tons of vegetables and some meat to pair up. S'porehokkiensnoodles makes no difference.Singapore Hokkien Noodles really is stir-fried egg noodles, leafy greens or shredded cabbage and-an assortment of seafood nestled in a small amount of gravy made from soy sauce and cornflour mixture. When I was back in USA I'm always in the kitchen prepare some new dishes but now while living in India I don't have that kind of interest in trying new recipes. Perhaps due to not availability of certain ingredients could be the reason or I'm just feeling uneasy to try out...never. 2tbsp peanut oil
1/2tsp red pepper flakes
1cup Chinese cabbage, shredded
1/2 cup of carrot shredded

188g butter
3/3 cup caster sugar
1.5 cup plain flour
1/2tsp ground cinnamon powder
2eggs lightly beaten
1 can store brought apple pie filling

Spicy Grilled Methi Chicken Stir-Fry What can I say about today's recipe:Outright delicious  Perfect combination of chicken  with methi leaves. This recipe happened by accident- the rain poured and the wind howled .winter time in USA and I I craved for a quick comforting chicken curry but all I wanted to do was to curl up in cozy bed and sleep. found fresh fenugreek (methi) and for some reason, I had methi  chicken curry in mind, so whisked some of my favorite ingredients and  result was a darn good curry. Fenugreek (methi) and chicken compliment each other very well. Methi chicken did make a satisfying dinner with steamed rice. A signature North Indian dish that goes well with any Indian bread. It has been far too long since I prepare something with mutton.Certain dish brings back the memories associated with the person who cook it or the people with whom we ate with and for which occasion we made it. Oh yes the following gravy was prepared for my friend Dana when I was back in Dallas. The mutton ids first marinated and slowly cooked in yogurt sauce and sauteed in ghee with tomatoes,cashew nut paste ,cinnamon and cardamom.
