Spinach and Mushroom Manicotti

A packet of manicotti was sitting in my pantry for quite sometime..My hubby was giving a looks which tells me:" When are you going to prepare them??? I'm looking at them everyday waiting to be platted for me to enjoys.!!! I was trying to make myself more comfortable with homely related dishes like vadi,sambar and different types of dosa which have prevented me from trying out other dishes. My kids and hubby like cheese very much compared to me..Three-cheeses in this dish will satisfy their cheese buds so I decide to prepare them for dinner yesterday and I happened to have all the required ingredients at hand.Stuffing hearty tubes of cooked manicotti with a fabulously rich blend of ricotta,mozzarella, mushrooms.spinach, Parmesan and parsley.Pairing them with marinara sauce and bake to perfection would be great for this freezing climate.Flavored Manicotti with hot chocolate was indeed a perfect dinner for us!!
Spinach and Mushroom Manicotti

Ingredients
Serving Size:4

1 box Barilla Manicotti
1 cup chopped mushroom of any kind
2 garlic clove minced
1 pack spinach chopped
2 eggs
1/2 cup shredded mozzarella cheese
1 cup ricotta cheese
1/3 cup chopped basil leaves
1 bottle Marinara Sauce
1/2 cup freshly grated Parmesan cheese
2tbsp extra virgin olive oil
salt to taste

Preparation Methods:
Preheat oven to 350°F. In a large pot -pour water with little salt and add the manicotti. Bring to boil for about 10 minutes.Drain and rinse in cool water-keep aside.Heat the oil in a large skillet on medium heat and saute the chopped mushrooms and garlic for 5 minutes.Then add in the chopped spinach and cook till they become tender.Set aside to cool. Beat the eggs lightly in a bowl and stir in the ricotta cheese,basil,salt and mushroom spinach mixture. Blend well. In a large greased baking dish add half the marinara sauce.

Fill the manicotti with the prepared mixture and place them in the baking dish. Pour over the remaining sauce evenly over the shells:- sprinkle the Parmesan cheese. and the shredded mozzarella cheese Cover the baking dish with a foil and bake for 30 minutes.Remove the foil and bake for another 10 minutes or until the cheese is completely melted. Transfer to plate and add more cheese if desired.

Very new dish for me dear. But I am sure , you have the power to turn the simple ingredients in to delicious meals by a touch.
Cheese & Marinara are a great combo and i am sure it was a hit.
