Serving Size: 6

6 chicken drumsticks

Grind paste:
5 shallots
3 garlic cloves
a small ginger
1tbsp chillie powder
1tsp garam masala
1tsp chicken masala powder
1/2tsp turmeric powder
1tsp fennel seeds
2tbsp crushed tomatoes
salt and pepper
2tbsp olive oil

Preparation Methods;
Grind all the ingredients for the paste into a fine paste and marinate the chicken drumsticks overnight in the fridge. Grilled the chicken for 350° C for 40 minutes or until golden brown or you could deep fry them.

Banana Walnut Cake With Chocolate Chips

125g butter
1 cup sugar
2 eggs lightly beaten
1 1/4 cup self raising flour
1tsp baking soda
2tbsp hot milk
3/4 cup mashed banana
1/4 cup walnut chopped and mixed with 2tbsp honey
1/2 cup chocolate chip tossed in 1tbsp flour
125g cram cheese
1tsp vanilla essence
2tbsp cream
1tsp cinnamon powder
1 banana sliced

Preparation Methods:

Preheat oven to 375°F with rack in middle. Butter a 9-inch rectangle aluminum cake pan.Stir together flour, baking soda, and salt.Beat together softened butter and 3/4 cup sugar in a medium bowl with an electric mixer at medium speed until pale and fluffy, then beat in eggs 1 at a time until blended. Beat in bananas, cream cheese,hot milk, cream and vanilla. With mixer at low speed, add flour mixture and mix until just incorporated.

Nasi Lemak

Nasi Lemak is a national dish ,a national heritage of Malaysia- normally eaten for breakfast and sold early in the morning at roadside stalls in Malaysia, where it is often packed in newspaper, brown paper or banana leaf.The rice is soaked in coconut cream and then the mixture steamed with knotted screw pine (pandan) leaves are thrown into the rice while steaming to give it more fragrance.Traditionally, this comes as a platter with cucumber slices, small dried anchovies (ikan bilis), roasted peanuts, stir fried water convolvulus (kangkong), hard boiled egg, fried eggs, fried fish,pickled vegetables (achar) and hot spicy sauce (sambal). Nasi lemak can also come with any other accompaniments such as chicken, cuttlefish, cockle, beef curry and these are spicy in nature.

4 large ripe tomatoes
1 tomato minced finely
1/2 cup water
2 cloves garlic
2 tablespoons ghee
1 cup water
2 teaspoons white sugar
1 teaspoon paprika
salt and pepper to taste

Preparation Methods:
Place the tomatoes and 1/2 cup water in a microwave-safe bowl, and cook on High 4 minutes in the microwave.. Cool tomatoes slightly, peel, and discard skins. Process the tomatoes, remaining water and garlic in a blender or food processor until smooth .Melt the ghee in a skillet over medium heat,add the minced tomatoes and saute till tender. Pour the tomato mixture ,sugar, paprika, and salt and pepper. Bring to a boil, reduce heat to low.
