In cooking there's no rules in how to preparing a dish right? We follow the main ingredient for a particular dish and have our own twist to them in order to suit the taste of our family member. The same applies for the following Uttapam Iddly...instead of making it in a form of doas- I have steamed them as iddlies. My SIL has a very different way of preparing Uttaapam- she tends to saute the ingredient first before adding them to the batter.I have paired them with spicy Potato Curry..

Ingredients for The Iddly:
1 cup doas batter
1 cup finely chopped red onions
2 green chillies minced
1tsp mustard seeds
1tsp cumin seeds
1tbsp ural dah
1tbsp channa dal
few sprig curry leaves chopped
2tbsp chopped coriander leaves
salt to taste
a pinch hing powder

Preparation Methods:
Heat 1tbsp ghee in a wok and saute all the ingredients expect the batter until golden brown.allow the mixture to cool and then add them to the dosa batter and give a good mix. Leave aside for 2 hours.Grease the iddly plate with a bit of ghee and pour a big spoonful of the batter.Steam cook for 15-20 minutes till they are done..Always let the idlly to cool for few minutes before you take them out. They will be soft and fluffy.

Ingredients for the Spicy Potato Curry:

1 cup diced potatoes
1 red onions chopped
2 tomatoes chopped
3 garlic cloves minced
1/4 cup tamarind juice
3 dried chillies
1/4tsp fenugreek seeds
1/2tsp mustard seeds
few curry leaves
a pinch hing powder
a pinch turmeric powder
1tbsp chillie powder
2tbsp coriander powder
1/2tsp cumin powder
1tsp curry leave powder
1/2tsp pepper powder

Preparation Methods:
Heat 2tbsp ghee and 2tbsp oil in a heavy bottom pan- add mustard. when it crack's add fenugreek seeds, curry leaves, garlic and red chilli's. fry them well. Then add the chopped onions and saute them till they turn translucent and add finely chopped tomatoes.Saute for about 5 minutes- then add all the spice powder.Fry them until the oil starts to separates.At this point add the diced potatoes and the tamarind juice. Lower the flame and cove the pan with lid. After 10 minutes remove the lid. Check whether the potatoes are tender-adjust the level of salt and spice -remove from flame and serve hot.
