I just couldn't believe how I miss this recipe for so long.The Taste of South Indian Cusiin and well liked by everyone-Sambar esp Murungaikkai Sambar-traditional southern fare. A homely item in every household of India..No meal is complete without it. It is ess3ntial that fenugreek,asafetida(hing) and tamarind are used to give the distinctive tangy quality. I have explained the values of these flavorful ingredient in my another blog: "A Cook's Culinary Encyclopedia"-Durmsticks and Leaves. This my version of prepare sambar..enjoy!!!

Ingredients
Serving Size: 4

1 cup lengthwise slice murungaikkai
5 eggplant diced
1/2 cup thoor dhal
5 garlic cloves
1 cup coarsely chopped tomatoes
1 cup chopped shallots
2 green chillies slit
few sprig curry leaves
1/4tsp turmeric powder
1tsp tamarind concentrate
1tbsp hot water
1/4 tsp mustard seeds
1/4tsp fenugreek seeds
1/4tsp hing powder
1tbsp sambar powder
1tsp coriander powder
1tsp chillie powder
chopped coriander leaves

Preparation Methods:

In a saucepan combine the thoor dhal and garlic cloves with 1.5 cup of water and turmeric powder and bring to boil.Turn heat to low and simmer,covered for about 30 minutes until very soft. You also pressure cook the dhal to 5 whistles.Dissolve the tamarind concentrate with hot water and set aside. Heat a heavy bottom kadai and splutter mustard seeds,cumin,fenugreek and curry leaves.Now add the chopped shallots, green chillies and tomatoes. Saute till the onion are browned followed by the vegetables and tamarind juice. Pour in about 1 cup warm water and all the spice powder-bring to boil. As its starts to boil mash the dhal mixture and add to the vegetable mixture. Combine well and bring to boil. Adjust the level of salt and spices. Remove from flame garnished with chopped coriander leaves.
