Chicken wing is my favorite part of the chicken. Since childhood whenever my dad makes chicken curry wings it would be saved for me always or else I will never touch the curry. My hubby only like to have drumsticks but now I have to fight with him to get those wings...well it's kinda of fun too sometimes. My son says that we both are behaving like a baby..heheh:D. I came across this particular recipe in on of the magazine while taking my kids for shots long back in Owasso. I haven't really thought about that recipe and then searched my whole desk for that recipe. Finally I got one and made them for lunch. While preparing my friend Dana called to inform me that they coming for sleepover ..what a coincidence. We had a feast for dinner with fried rice,pizza and Jalapeno chicken.. It's always a pleasure to have good friends over..Don't we agree???
Ingredients: Serving Size:About 15 pieces
1lb chicken winglets 3 cloves garlic 1 small piece ginger 5 curry leaves 1/2 med. onion 2-3 green chillies 2 tbsp chopped cilantro 3 tbsp lemon juice 5 black peppercorns salt to taste 1 egg plain bread crumbs 2 shallots finely chopped 2 cloves garlic finely minced
Grind ginger, garlic, onion, green chilli, cilantro, curry leaves alt and pepper along with 1 tbsp water to a smooth paste.Prick the chicken all over with a fork. Apply the marination to the chicken and leave refrigerated overnight.Beat an egg into a bowl and beat well.
Spread out the bread crumbs on a flat plate.Lift out the chicken one at a time, leaving marinade sticking to them. Dip first in beaten egg and then in bread crumbs and set aside. Prepare all the chicken pieces this way, and let them sit, breaded for 10 minutes. You would find some juice of the marinated left over-reseved them for later use.Heat oil in a skillet over medium low flame. When the oil is hot, place chicken winglets killet and fry until golden brown on both sides.Remove gently with a spatula.In another pan add 2tbsp oil (use the oil that you have fried the chicken) add the chopped shallots and garlic followed by the reserved marinate juice.Once they are combine well add the fried chicken winglets. Saute til they are well coated.Transfer o a serving platter garnisheed with chopped coriander leaves or even lemon wedges and raw onions.Serve hot garnished chopped cilantro along with lemon wedges and raw onion rings.
