Ingredients:
2 cups of cooked Basmati Rice
1 cup of finely chopped onions
2 green chillies chopped
1/2 cup of green peas
3 eggs beaten well
1tsp of mustard seeds
1tbsp of finely minced garlic
1tsp of crushed chillie flask
1tsp of garam masala
1tbsp of chillie powder
1/4tsp of tumeric powder
2tbsp of curry masala powder
1tsp pepper powder
Salt to taste
1tsp of lemon juice
1 cup chopped mushrooms of any kind
Chopped corinader leaves
Preparation Method:
Add 2tbsp of oil ,1tsp of salt and 1tsp of pepper powder to the cooked rice Mix well and keep a side.
Coat a frying pan with 1tsp oil,pour in the beaten eggs. Add salt and pepper.Scramble it well in the oil and keep aside.
Coat a large wok with 2tbsp of oil, add the minced garlic and the chillie flask. Then add the mustard seeds,chopped onion,1/4tsp of salt,garam masala,chili powder,pepper powder,turmeric and curry masala powder.Fry the mixture for 10 minutes. Then add the chopped mushrooms and saute til they become tender. Now add the scramble eggs, green peas,lemon juice, mix well. Lower the flame and add the cooked rice mixing well in the mixture. Serve hot with chopped coriander leaves.
