Masala Vermicelli (Semiya)

1 cups Vermicelli
2 tbsp ginger garlic and green chillie paste
1 large onions sliced very finely
1 small tomato diced
1/2 tsp chana dal
1/2 tsp urad dal
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/4 cup peas
1/2 carrots
1/2 cup finely chopped cabbages
1/4tsp turmeric powder
1/2tsp chillie powder
1/4tsp garam masala
1 tbsp ghee
2 spring curry leaves
2 cups water
salt to taste
chopped coriander leaves

Preparation Methods:.

In wok add 1tbsp oil and roast the vermicelli until golden brown-keep aside. In the same wok heat more oil and add mustard and cumin seeds. Once it splutters add channa dal, urad dal, and curry leaves. When they start to crackle ,add chillies,ginger garlic chillie paste, onions and the spice powders. Saute til the raw smell are removed. Then add all the vegetables and fry til they become tender.Add some salt and add 2 cups of warm water. Bring to boil followed by the vermicelli and stir simultaneously to prevent lumps from forming. Cover with a lid and let all the water gets evaporated. Finally add the chopped coriander leaves and drizzle the ghee over them.

Note: We could also add some chopped fried eggs to the masala vermicelli too. My kids like to have eggs in everything :)
