Cheese Quesadillas With Grilled Chicken
Since my son has started going to kindergarten I got to prepare some snacks for him very fast in the morning. That's when I got a chance to prepare these for him and he's simple love them some much and wants them even for lunch too. There's various method in prepare this dish and this in my version of quesadillas.I made them with hot-dogs for son instead of chicken and rest of us had it with grilled chicken..

Serving Size: 12

12 flour tortillas
1/2 feta cheese with basil and tomatoes
1tsp of any pizza seasoing
1 cup grated swiss cheese
1 cup cheddar
2 large sweet onions, sliced and grilled
2 to 3 roasted red bell peppers, julienne
6 grilled chicken breasts, sliced thinly (omit them if you desire)

Preparation Methods:

Place a saute pan over medium heat. Place butter in the pan, followed by a flour tortilla. Lay some of the cheeses in first-then add the onions , peppers, chicken, top with a little more cheese, and cover with a second tortilla. Place a lid on the saute pan, and let sit for 3 to 4 minutes or until golden brown before flipping. Flip and cook until golden brown on both sides. Repeat with remaining tortillas and ingredients. Allow the quesadilla to cool before cutting, about 2 minutes. Cut into pie shapes. Enjoy.

Note: Instead of place another tortilla on top of the chesse fillings we can also just fold them into half and let the cheese to melt to seal the sides of the tortilla. Remember the more cheese we add the better the taste would be. For those who are vegetarian just omit the chicken or add your choice of vegetable like zucchinis
