Making the same type of dosai is kind of bored. I was visiting one of my friend Nithya's Fourth Sense Samayal blog where she had posted a recipe on Wheat Bread Dosai. I thought her creations of that dosai was so good and decide to give it a try. It was so good and then I prepared the same recipe with the way my family member like. It was good too. Thanks you so much Nithya for sharing this unique way in preparing this very yummy tummy filling recipe.Here my version of Bread Doasi with the idea from Nithya's recipe.

Ingredients:
Serving Size:4

5 pieces of white bread cubed
1 tomato
2tbsp ghee
1tsp fennal seeds
few curry leaves
1tbsp ginger garlic paste
2 dried chillies
2 shallots chopped finely
a pinch of hing powder
salt to taste
1 cup thosai batter
chopped coriander leaves

Preparation Methods:
Add all the ingredient into a blender expect the batter. Grind them into a smooth paste by add little water from time to time. Mix the paste into the batter.

Ingredients
Serving Size:4

1 pack manicotti
1 pack cream cheese, softened
3tbsp crumbled feta cheese with basil and tomatoes
1 small chopped onion
1/4 cup diced fully cooked smoked ham
1/3 cup finely sliced mushrooms blenched in hot tub
1 tablespoon chopped fresh chives
1 cup shredded Mixed Cheese

For the Mushroom Sauce
1tbsp butter or margarine
2 cups sliced fresh mushrooms
1 can tomato drained
1 small chopped onion
2 cloves garlic, finely chopped
1/3 cup chicken broth
1tsp lemon juice
1/4tsp lemon pepper
1/2 cup whipping (heavy) cream

Preparation Methods:

Heat oven to 375°C degrees. Cook and drain manicotti as directed on package. Make Garlic-Mushroom sauce in same saucepan.Mix mushrooms,cream cheese, feta cheese and onion in small bowl, using fork, until well blended. Stir in ham and chives.Fill each shell with about 3 tablespoons of the cheese mixture, using small spoon.Pour half of the sauce unto greased square baking dish and arrange filled shell…

Ingredients:
Serving Size:4

1 package fresh tortellini
2tbsp olive oil
1/2 cup chopped onion
3 cloves garlic, minced
1 can chopped spinach drained
1 cup cubed, seeded, fresh tomatoes
1 1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup whipping (heavy) cream
1/4 cup grated Parmesan or Romano cheese

Preparation Methods:
Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until well cooked and drain.Meanwhile, heat oil in large skillet over medium heat until hot add onion and garlic; cook until tender and lightly browned. Add spinach, tomato, basil, salt and pepper and cook 5 minutes, stirring occasionally. Stir in whipping cream and Parmesan cheese; cook until mixture just comes to a boil.Reduce heat to low and stir in cooked tortellini. Cook an additional 4 or 5 minutes or until thoroughly heated. Serve with additional cheese if desired.

Since my son has started going to kindergarten I got to prepare some snacks for him very fast in the morning. That's when I got a chance to prepare these for him and he's simple love them some much and wants them even for lunch too. There's various method in prepare this dish and this in my version of quesadillas.I made them with hot-dogs for son instead of chicken and rest of us had it with grilled chicken..

Ingredients
Serving Size: 12

12 flour tortillas
1/2 feta cheese with basil and tomatoes
1tsp of any pizza seasoing
1 cup grated swiss cheese
1 cup cheddar
2 large sweet onions, sliced and grilled
2 to 3 roasted red bell peppers, julienne

Hmmm Pineapples..hmmm my favorite fruit and I just love them. Malays used to have these fruits in their cooking like Sambal Prawn with Pineapple and famous desert Pineapple Tarts.I would post some the recipes using pineapple soon. For a very long time I wanted to prepare these tasty spicy North Indian Starters: Tandoori Chicken but always end up doing something else. I got a chance to prepare these for my hubby's b'day on 19th Augest 2009 -a day before his actually birthday as normally we don't have non-veg on our birthdays. It was a collection of my hubby's favorite recipe as a birthday present from me. We had a some dinner gathering with my brothers for his birthday and it was a memorable day for all of us as one of my brother VJ is moving to Ashburn soon for his job transfer-a sent off party too- just like killing two birds with one stone.


1.Tandoori Chicken

Ingredients
Serving Size: 5

1 whole chicken cut into 16 pcs
1 tsp of kashmiri red chilli powder
2 tbsp of lemon juice
Salt to taste

For Marination:
1 cup well beaten fresh yogurt
1 tspn of kashmiri red chilli powder
Salt to taste
2tbsp ginger garlic paste
2 tbsp of lemon juice
½ tsp of garam masala powder
2 tbsp ghee

Serving Size:5

1/2lb Banana Chillies-slit on one side and seeds removed
1 medium onion chopped
1tsp chillie powder
1tsp corinader powder
1/4tsp turmeric powder
1/4tsp mustard seeds
1/4tsp cumin seeds
few springs of curry leaves
1tbsp brown sugar

For the Salan Paste:Roast each ingredient with 1/4tsp oil and grind to fine paste with 1tbsp ginger-garlic paste and 1/4 cup tamarind juice:

1/2 cup peanuts
1/4 cup sesame seeds
1tsp cumin seeds
1tsp coriander seeds
1/4 cup shredded fresh coconut
1 dried chillie
a small cinnamon stick
2 cloves
a pinch of turmeric and hing powder each

Preparation Methods:
Heat 1tbsp oil in a heavy bottomed wok and fry the banana chillies slightly-drained and keep aside. In the same wok add another 3tbsp oil and splutter curry leaves,cumin and mustard seeds followed by the chopped onions.Saute the onion until they turned brown-then add the salan paste and pour 1/2 cup of warm water and all the spice powders. Ingredients
Serving size: 5

1 cup moong dal
1/4 tsp salt
1/2 tsp ginger-garlic-green chili paste
few sprig of curry leaves
1/4 cup well beaten fresh curd
a pinch of hing powder
1 cup dosai batter
salt to taste
Preparation Methods:
Roast the dal till the raw smell disappears. Soak the dal for an hour.Grind the dal along with all the ingredients expect the dosai batter and the required quantity of water into a thick batter. Mix the grind batter with the dosai batter and leave overnight.Grease the iddly plate with oil and then pour a big spoonful of the batter. Steam cook for 15-20 minutes till they are done..Always let the iddly to cool for few minutes before you take them out. They will be soft and fluffy. Enjoy these soft fluffy iddlies with sambar.

For the past few months my hubby is really working like nuts during his production schedules and hardly see him around like before. He's at work by the time I wake up in the morning and come back very late. Always on the computer typing or on call most of the time.So I thought of treating him with his hot favorite snack as a sweet surprise for him one evening with a steaming hot Masala Tea.
