Stir-Fry Chicken In Chilli Oil
One of my orkut friend Seema wanted to try out some chicken recipe of mine. I wanted to try something new totally different from what I actually do... The main ingredient in the recipe is chilli oil which give a the taste to this dishes of mine. I tried out this twice and it really tasted so good and delicious and would like to share the recipe will all. Hope you guys will like this as much as my friend and I did..Please try the recipe and let me know the outcome.

Ingredients
Serving Size: 4

Marinate for the chicken:
1lb chopped chicken
1/2tsp turmeric powder
1tbsp chilli powder
1tsp grama masala
juice of half lemon
1tsp salt
1tbsp chicken masala powder

Marinate the chicken with all the spice powder in a large bowl overnight and cove with a plastic wrap in fridge.

3tbsp crushed chili flakes
few curry leaves
1tbsp fresh curd
2tbsp finely minced garlic cloves
1 onion chopped
2 green chillies quartered
1tbsp tomato paste
1tbsp crushed tomato
1/2 tsp ghee
1tbsp butter
10 tbsp vegetable oil
chopped coriander and onion leaves

Preparation Methods:
Leave the marinate chicken in room temperature. Pre-heat the oven to 450°C. Grease a oven-proof tray with butter and grilled the marinate chicken for 15 minutes to get the golden crust on them. Remove and keep aside. Heat a heavy bottom wok with oil and ghee on a medium flame. Once heated add the chilli flakes and let the oil infuse by it's flavor- followed by curry leaves,minced garlic cloves and chopped onions. Once the onions turns golden brown-add the curd,tomato paste salt and crushed tomatoes. Saute for 10 minutes or until the oil separates then add the chicken pieces.

Sauté for 10 minutes or until the oil separates then add the chicken pieces. Sauté till the chicken becomes crispy and golden brown. Then add the green chilies, green onions and coriander leaves. Mix well and transfer to a serving platter and squeeze more lemon juice if you prefer.
