Chicken Masala Gravy

Serving Size: 4


1lb chicken thigh cut into cubes

1 large onion thinly sliced

1 tomato thinly sliced

2 garlic cloves thinly sliced

¼ tsp cumin seeds

¼ tsp fennel seeds

1 cinnamon stick

2 cloves

2 cardamom pods

Few curry leaves

1tsp chilli powder

2tbsp coriander powder

½ tsp turmeric powder

1tsp garam masala

2tbsp crushed tomatoes puree

1tsp chicken curry powder

½ tsp grounded pepper

½ cup warm water(optional)

Salt to taste

Marinate for the chicken:

1 small onion chopped

5 garlic cloves

a pinch cumin seeds

a pinch fennel seeds

Preparation Methods:

Grind the following ingredient into a smooth paste without added water and marinate the cube chicken for 1hour.Keep aside.

Coat a large frying pan with 2tbsp oil. Once heated add the curry leave followed by cloves, cardamom pods, cinnamon, cumin seeds, fennel seeds and the onions, Add the tomatoes once the onion turn slightly brown. Sauté the mixture till the tomatoes become soft. Then add all the spice powders except pepper and crushed tomatoes puree- Fry them until the raw smell of the spice are gone. Now add the marinated chicken cube with half cup of warm water. Cover the pan with a lid and cook till the chicken becomes tender. Remove the lid- add the pepper and crushed tomatoes puree. Once the gravy thickens adjust the level of salt and remove from flame. Serve with steam rice or any types of rotis..

Note:If want to have more gravy add more water and adjust the level of spice accordingly to per taste.
