Lemon Rice

Lemon rice

Ingredients

1 cup of cooked rice
6tbsp of lemon juice
1tbsp of channa daal
1tbsp of ural daal
2tbsp of roasted peanuts
1tbsp of crushed chillie flask
1 green chillie finely chopped
1tsp of mustard seeds
1tsp of cumin seeds
1/4tsp of hing powder
4 curry leaves
1tbsp of cashew nuts
1tbsp of chopped coriander leaves
Salt to taste

Preparation Methods:
Add salt and lemon juice to the cooked rice. Keep aside.
Coat a frying pan with 4tbsp of olive oil, add the mustard seeds. Once the mustard starts to crack,add the remaining ingredient one by one expect the coriander leaves. Fry the ingredient till aroma of the spices arise. Remove from flame and mix the ingredients with the rice. Adjust the salt level. Garnish with chopped coriander leaves and serve with pickles.


Soup Noddles

Noddles is one of the easiest dish to prepare...a favorite item of everyone...kids just love them..trust me sure to finish the bowl in any minute. One of my son's favorite dish..Very simple fast recipe.

Soup Noddles

Ingredients

1 cup of Angel Hair Spaghetti
1/4 cup of chopped tofu(beancurd)
1/2 cup of mixed frozen vegetables
1 small onions finely chopped
1 tomato finely chopped
1/2 cup of shredded lettuce leaves
1/2tsp of garlic powder
1tsp pepper powder
1tsp of Mrs Dash Seasoning Blend
1tsp of soya sauce
1 egg
1/4 cup of milk
11/2 cup of water or stock
Salt to taste

Preparation Methods:
Boil the spaghetti and tofu in a large pot of salted water for 10 minutes. Drain and keep aside.
In a large wok add 2tbsp of oil,add the chopped onion,tomato and salt. Fry for 5 minutes,add the frozen vegetables and let it cook for about 3 minutes. Pour in 1/4 milk and water. Vallarai Chutney

This leave are very popular in Sri Lankan cusisines. It's called Vallarai in tamil and has medical values. Normally used them to make chutney and has very bitter peppery taste. I found the Vallarai leaves in the Asian store and it's my hubby's farovite chutney.


Vallarai Chutney

Ingredients

1cup of Vallarai leaves
1bsp channa daal
1tbsp coriander seeds
5 dried chillies
6 curry leaves
5 shallots
4 garlic
1tsp cumin seeds
Tamarind pulp-lemon size
1/4tsp of hing powder
Salt to taste


Preparation Method
Boil the valliarai leaves in the microwave for 4 minutes on high. Squeeze out the water and keep it aside.
In a frying pan add oil and add all the ingredient expect Vallarai leaves. Sti fry the ingredient well then add the Vallarai leaves and combine well.

Once cool, grind the mixture in a fine paste.
This chutney could be eaten with rice or even crispy doasi.
