Oyster Sauce Chicken curry

During my teenage life,I had a great passion for cooking as I studied Home Economic in my Secondary School in S'pore. My desire for cooking different types of cuisine was great but don't know where and how to start. As I was confused,I made a trip to my fourth uncle house in Malaysia,Kulang during my school holiday. That's where I first got started to cook. My first recipe was my aunt Dhanalakshmi's Oyster Sauce Chicken Curry.It came out well and all my family member appreciate my effort.This how my cooking trip started to take it's shape..

Oyster Sauce Chicken Curry


Marinate For the Chicken

Whole chicken chopped
1tbsp of ginger garlic paste
2tbsp of soy sauce
1tsp sesame oil
2tbsp of cornflour mixed with 1tbsp of lemon juice
1tsp of pepper powder
1/2tsp of salt
1tsp of chili powder
1 egg white-beaten well

Marinate the chopped chicken with all the above mentioned ingredients overnight in fridge.

1 chopped onions
1 chopped tomatoes
2 red chillies split into halves

For the Curry Masala
20 shallots
2 tomatoes
10 dried chillies-adjust accordingly to taste
2tsp of peppercorns
1tsp of fennel seeds
1/2tsp of nutmeg powder
1tsp of poppy seeds
1/2 cup of freshly grated coconut or coconut powder
2tbsp ginger garlic paste

In a fry pan, add 2tbsp of oil and roast all the curry masala ingredients til fragrant. Once cooled grind to a smooth paste,keep aside.

Whole chicken-chopped and marinate with 1tsp of salt and turmeric powder

1 chopped onions
2 chopped tomatoes
4pcs curry leaves
3 cardamon pods
5 cloves
1 Cinnamon stick
2 bay leaves
1tsp mustard seeds
1/2tsp of cumin seeds
3tbsp of coriander powder

Preparation Methods:
In a heavy work,add couple spoons of oil, add mustard seeds. When it starts to crack add the remaining ingredient expect the chicken.Once the onion and tomatoes are cooked, add the chopped chicken pieces, coriander powder and 1 cup of water and cover. Spicy Green Chillies Chicken Gravy

For the first time I'm using green chillies instead of dried chillies for my came out excellently and everyone say it was so good.....try out this dish. The amount of chillies used could be adjust to your taste..

Spicy Green Chillies Chicken Gravy

For the Green Chillies Masala (Paste 1)
10pcs of green chillies(amount of chillies are adjustable to taste)
2tbsp of fennel seeds
2tbsp of peppercorns
6tbsp of chopped coriander leaves
1tbsp of mint leaves
1tsp of poppy seeds
1tsp of nutmeg powder

In a frying pan,add 3tbsp of oil and roast all the ingredients for the masala well. Once the mixture is cooled add enough amount of water and grind into a smooth paste. Keep aside

3tbsp of cashew nuts -grind into a fine paste with 1/2 cup of water.(Paste 2)

Whole chicken-chopped into bite able pieces. Marinate the chicken pieces with 1tsp of turmeric powder,1 cup of water and salt. Microwave the chicken for 5minutes on high. Keep aside.

Grilled Buffalo Wings

Ingredients for Buffalo Grilled Chicken Wings:

1lb Chicken Wings
1 packet of McCormick Original Buffalo Seasoning mix
1tbsp of ginger garlic paste
1tbsp of chillie powder
1tsp of gram masala
3tbsp of hot buffalo sauce
4tbsp of lemon juice
1tsp of grounded pepper
2tbsp of olive oil
Salt to taste

Preparation Method:
In a large bowl add all the spice ingredient, mix well. Then rub the mixture evenly over the chicken.Let the chicken marinate for a least two days in the fridge. Grilled the chicken for 1 h 30 minutes at 350°C.
