Roti Prata

A Singaporean Indian dish, Roti Prata is an all time local favorite fit for breakfast, lunch, dinner or supper. Roti prata is made of dough composed of fat,egg,flour and water a version of Roti Canai in Malay. In Singapore you can get various types of prata stuffing like egg prata,chess prata,chocolate prata even banana prata. If you visit Jalan Kayu - easter part of Singapore you can find many more differed types of prata and they are famous in that area. At weekend the lots of cars will be parked at the sides of the road at late night. I have being there many time to have my dinner with my friends.This snaps were taken from the net.

Roti Prata
Here the my version how I prepare my prata. Frozen prata are now wide available in almost everywhere in USA but I still perfer to make them at home once in while...

Serving Size: 4

2 cups of all purpose flour
1/4 cup of wheat Flour
2 egg white beaten well
1/4 cup hot milk
1/4tsp of baking soda
1/4tsp of sugar
salt to taste
oil as required


Coriander Rice

Coriander Rice

Ingredients :

3 cups rice (Cooked)
1 bunch coriander
¼ inch ginger
5 or 6 cloves garlic
1 small cup coconut
2-3 tbsp oil
Salt to taste
A pinch turmeric powder
2 tbsp lime juice
5 - 6 Cashew nuts, fried
1 tsp jeera
1 tsp mustard
1 tsp moong daal
3-4 green chillies cut into small pieces

Preparation Method :
Cut the bunch of coriander leaves into small pieces. Make a fine paste of the coriander leaves, ginger pieces, garlic cloves and coconut in a blender.
Take oil in a pan. Season it with mustard, jeera and moong daal, add the green chillies. Fry a little and then add the paste. Fry for a while and then add salt along with turmeric powder.
After frying for about ½ a minute, add the cooked rice.
Mix well the mixture till the rice turns into a beautiful green color. Cover it with a lid and leave it on low flame for few minutes.
Then add lime juice and finally garnish with cashew nuts.

Cabbage Rice

Ingredients :

2 cups cabbage, finely chopped
1 cup rice cooked
1 onion chopped
¼ cup coconut
¼ cup groundnuts
1 tsp urad dal
1 tsp channa dal
4 green chillies
1tsp of ginger garlic paste
curry leaves

Preparation Method :
Cook rice with less water as you would cook for pulav.Grind coconut, groundnuts, green chillies, ginger and salt into a smooth paste
Fry mustard,onions,channa dal, urad dal, curry leaves for 5 minute,add ginger garlic paste and cabbage, and let it cook for a few minutes. Add the ground masala to the above and keep cooking until the flavor comes out.
Now combine the mixture with rice.

Chapati (Indian Bread)

Chapati is a very popular recipe, daily Indian traditional household item which can be eaten any time. Chapatis or rotis are fresh homemade bread, made with wheat or other grain flours and baked without yeast. They are very easy to prepare.


1 cup of wheat flour
1/2 cup of hot milk
1/4 cup of curd or yogurt
2tbsp of ghee
1/4tsp of sugar
1/4tsp of salt
hot water

Preparation Method:
In a large bowl sift the wheat flour,sugar and salt. Make a well in middle of the flour and pour the milk,curd or yogurt. Knead the mixture into a smooth dough adding enough of hot water.
Divide the dough into equal size balls, about 1 1/2 inches in diameter. Flatten the balls with a rolling pin into round discs approximately 6 inches in diameter.
Heat a heavy based frying pan or griddle on a medium heat. Place the rolled chapati on the griddle.
While on the girdle press the edges of the chapati with a paper towel . You will find that small bubbles start forming on the chapati that means it is getting cooked.…
