Banana Muffins

Serving size:24


2 cup cake flour or all-purpose flour

2tsp baking powder

½ cup melted butter

1/2tsp salt

3 large bananas mashed

1.5 cup sugar

2 egg

1tsp vanilla essence

1/2 cup chopped walnuts

1/2 cup sliced banana

½ cup hot milk stirred with 1tsp coffee powder

Preparation Methods:

Line 24 muffin pans with paper liners. Preheat oven to 350° C degrees. Sift flour,salt and baking powder together into a bowl. Keep aside. In a separate bowl, cream butter and sugar until light and fluffy. Slowly add the eggs and beat well and alternately add the flour mixture and milk , beating well after each addition. Finally add the vanilla essence and the mashed banana. Pour the batter into the prepared pans -sprinkle the chopped walnuts and a a sliced banana piece on each. Bake for 25 minutes.
